Peanut Butter Cup Cookie Brownie Bars 1 Picture

Ingredients

  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup butter, room temperature
  • 1/2 cup peanut butter
  • 4 eggs {2 for cookies, 2 for brownies}
  • 1 1/4 cup flour
  • 3/4 t baking soda
  • 1/2 t baking powder
  • 1/4 t salt
  • 2 boxes Ghirardelli Double Chocolate Brownie Mix
  • 2/3 cup vegetable oil for brownie mix
  • 32 snack sized peanut butter cups {~28 for pan, ~4 chopped to top}
  • 1/4 cup peanuts, chopped
  • 1/4 cup chocolate chips, chopped

Preparation

Step 1

Preheat oven to 375 degrees
Beat butter until creamy
Beat in brown and white sugar, then peanut butter and 1 egg
In a separate bowl, mix together flour, baking soda, baking powder, and salt.
Stir dry ingredients into wet ingredients.
Press dough into the bottom of a greased or parchment covered 9×13 baking pan
Place whole peanut butter cups on top of the peanut butter cookie mixture to cover the pan
Chop remaining peanut butter cups coarsely and set aside
Mix the two boxes of brownie mix as indicated on the box
Pour brownie mix over peanut butter cups and cookie dough.
Bake for about 1 hour
Pull the bars out and sprinkle with chopped peanut butter cups, peanuts, and chocolate chips
Bake for another 10 – 15 minutes, or until brownies appear mostly cooked on the inside
Cool entirely, then cut and serve.
