Chicken Breast in Garden Sauce

Ingredients

  • 1/4 c. olive oil
  • 1 1/2 lb. boneless, skinless chicken breasts
  • 1 1/2 lb. green peppers, seeded and sliced thin
  • 1 med. onion, thinly sliced
  • minced garlic
  • 2 lbs. tiny yellow tomatoes
  • 2 T. chopped fresh basil
  • salt
  • grated parmesan cheese
  • 1 lb. fettucini, cooked

Step 1

In large skillet, saute chicken breasts until golden brown on both sides, about 5 minutes. Remove from pan; stir and set aside. Reduce heat to medium, add peppers, onions and garlic. Cook and stir until peppers and onion are golden. Add 1 1/2 pds. tomatoes, the basil and salt. Cover and cook 10 minutes longer or until tomatoes are made a sauce and chicken is tender. Halve remaining tomatoes and add to skillet with 1/2 cup parmesan cheese. Stir to combine and to warm tomatoes, Serve over fettucini.
