Pork and Butternut Squash Stew

Ingredients

  • 1 ½ pounds boneless pork, cut into ½ inch cubes
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 3 cups chicken broth
  • ½ teaspoon salt
  • ½ teaspoon dried rosemary, crushed
  • ½ teaspoon rubbed sage
  • 1 bay leaf
  • 2 cups cubed butternut squash
  • 1 large potato, peeled and cubed
  • 2 cups carrots, peeled and diced

Preparation

Step 1

Add all ingredients to the slow cooker. Cook on high for 1 hour, then reduce heat to low and simmer 4 hours, or until tender.
