Ingredients
- Pork Tenderloin
- 16 0z Apple Juice
- 2 ea Apples
- 1 ea Onion
- 2 ea Zucchini
- 8 ea New Potatoes(cut in fourths)
- 2 ea Squash
- 4 ea Small carrots (sliced)
- 1 tsp. Cooking oil
- 2 tbls. Sugar
- 2 tbls. Flour
- Salt
- Pepper
Preparation
Step 1
Salt and pepper tenderloin to taste
Place in foiled roasting pan
Place zucchini, squash,carrots,potatoes,and one slice apple into the roasting pan to cook with the pork (should have plenty of foil to make a sort of package around pork)
Pour 8 oz of the apple juice in roasting pan
Follow direction for cooking provided on the pork lable
SAUCE
Chop the onion and remaining apple into medium size pieces
Place oil in large skillet
Place the onion in first and cover with the two tablespoons of sugar
Let onions carmalize
Add apple and let the two simmer together until they get soft and about to fall apart.
In another bowl whisk together the remaining apple juice and flour.
Add this to the onion/apple mixture
Let simmer until thick
