Twice Baked Potatoes

Ingredients

  • An entire whole head of garlic
  • 10 small potatoes
  • 1 T parsley
  • 1/2 t salt
  • 1/4 t pepper
  • 1/4 c Parmesan cheese
  • 1/2 c heavy or whipping cream

Preparation

Step 1

1) Wrap entire garlic head in foil after drizzling with oil.

2) Bake potatoes for 45 min. at 450 degrees F.

3) Separate garlic and squeeze pulp into a bowl.

4) Slice each potato lengthwise and scoop out the insides into the bowl with garlic. Save 12 of the best potato shells and place in a 9 x 13 pan.

5) Beat together the garlic, potatoes, parsley, salt, pepper, and cheese. Add cream and beat till smooth.

6) Spoon into shells. Sprinkle with cheese and bake for 20-30 min. at 350 degrees F.
