Seafood-Shrimp Rice Salad

Ingredients

  • 1 cup cooked rice, cooled
  • 1 cup cooked shrimp, small
  • 1/3 cup chopped red bell pepper
  • 1/3 cup chopped onion
  • 1/3 cup chopped olives with pimentos
  • 2 tablespoons fresh lemon juice
  • 1/3 cup mayonnaise
  • salt, pepper to taste

Preparation

Step 1

Combine rice, shrimp, and chopped vegetables.
Drizzle with 2 tablespooon fresh lemon juice.

Add mayonnaise and salt, pepper.

Serve over lettuce, chilled, and garnish with paprika and parsley.
