Blueberry Coffe Cake

Ingredients

  • 2 cups flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ½ cup butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • ½ cup milk
  • 1 cup blueberries
  • Icing sugar
  • 1 cup packed brown sugar
  • 2/3 cups flour
  • 1 tsp. cinnamon
  • ½ cup butter

Preparation

Step 1

Preheat the oven to 350 degrees. Grease a bundt pan. Mix 1 cup brown sugar, 2/3 cup flour, and cinnamon in a bowl. Cut in ½ cup butter, and mix until crumbly. Set aside. Beat ½ cup butter until fluffy, add 1 cup white sugar, beating until light and fluffy. Beat in egg and vanilla. Combine 2 cups flour, baking powder, and salt in another bowl. Add flour alternately with milk to the creamed mixture, beating well after each addition. Spread ½ the batter in a pan, cover with berries and add remaining g batter by tsp. Cover with the topping. Bake at 350 degrees for 55 – 60 minutes, until golden. Dust with icing sugar.
