Ingredients
- 1 lb hot Italian sausage (from Bari)
- 1 cup chopped onion
- 2 diced bell peppers
- 5-10 cloves garlic, minced
- 1/2 cup chopped parsley
- 1/4 cup olive oil
- 2 (28 ounce) cans crushed tomatoes (Contadina)
- 2 teaspoons salt
- 1/2 cup of balsamic vinegar
- 1 bay leaf
- 1 (6 ounce) can tomato paste
- 3/4 teaspoon dried basil
- 1/2 teaspoon ground black pepper
Preparation
Step 1
1. Remove casing and brown Italian sausage in a separate skillet.
2. In a large saucepan over medium heat, sauté onion, bell peppers and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, and bay leaf. Cover, reduce heat to low, and simmer 2 hours.
3. Stir in tomato paste, basil, 1/2 teaspoon pepper, vinegar and simmer 60 minutes more. Serve.
