Linguine with Shrimp Scampi

Ingredients

  • Vegetable oil
  • Salt
  • 1 ½ lbs linguine
  • 6 Tbsp unsalted butter
  • 5 Tbsp olive oil
  • 3 Tbsp minced garlic (9 cloves)
  • 2 lbs large shrimp (about 32)
  • ½ tsp fresh ground pepper
  • ¾ cup chopped fresh parsley
  • grated zest of 1 lemon
  • ½ cup freshly squeezed lemon juice (4 lemons)
  • ½ lemon, thinly sliced in half rounds
  • ¼ tsp hot red pepper flakes

Drizzle some oil in large pot of boiling water. Add salt and linguine and cook for 7-10 minutes. IN another pan melt butter and olive oil together. Add garlic and saute for 1 minute. Be careful, the garlic burns easily. Add the shrimp, 1 Tbsp salt and pepper and saute until shrimp have just turned pink, about 5 minutes stirring often. Remove from heat and add parsley, lemon zest, lemon juice, lemon slices and red pepper flakes. Toss to combine. When pasta is done, drain and put back in pot. Immediately add shrimp and sauce, toss well and serve.
