Chicken Fricasse

Ingredients

  • 3 ½ - 4 ½ lbs. chicken parts, rinsed and pat dry, skin removed
  • Salt and pepper
  • 4 tbs. butter
  • 1 ½ cups onions, chopped
  • 1/3 cup flour
  • 2 cups hot water
  • 1 ¾ cups chicken broth
  • 8 oz. mushrooms, sliced
  • 3 medium carrots, peeled and diced, about 1 cup
  • 2 – 3 large celery stalks, diced, about 1 cup
  • ½ tsp. dried thyme
  • Salt and pepper

Preparation

Step 1

Season the chicken and heat oil over medium heat until fragrant. Place the chicken in the pan and cook, turning once, cooking for 3 – 5 minutes on each side. Remove and add the cook onions, stirring occasionally until they are tender; but not brown (about 5 minute) then stir in the flour.

Cook an additional minute, then remove the pan from heat and whisk in the water and broth. Bring mixture to a boil over high heat and add the mushrooms, carrots, and celery. Add the type and season to taste.

Return the chicken to the pan. Bring mixture to a slow simmer and cook, covered for 20-30 minutes. Stir in the cream, and juice.

Stir and serve immediately
