Apricot Banana Nut Bread

Not being able to find the recipe for this nut bread, I combined two recipes that I thought would work. Also, I had a few dates, so I threw them in, as well as about 1/4+ cup of white chocolate chips.

Ingredients
- 1 1/2 c flour
- 1/2 c whole wheat flour
- 1 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1/8 c Splenda brown sugar
- 1/8 c measurable Splenda
- 1/2 c dried apricots
- 1/4 c pecans or walnuts
- 1 very ripe banana
- 1/2 c skim milk
- 1/4 c fake eggs, or 1 egg
- 4 T butter, melted
- 1/2 c quick oats
- 1/4 t vanilla
Preparation
Step 1
Chop the apricots and nuts (and dates) in the food processor with 1/2 c of flour.
Put the remaining flour, baking powder, baking soda, salt, and sugars in the food processor and whirl to blend. Place the banana in the food processor.
Add the vanilla to the milk or eggs. While the food processor is running, add the milk, eggs, and melted butter to the dry ingredients and banana.
When blended, add the chopped apricots and oats (and white chocolate chips) and whirl to incorporate.
Grease and flour the bottom of a 9x5 loaf pan. Spread the batter evenly in the pan. Bake in a pre-heated oven at 350 for about 60 minutes.
