Baked Taco Casserole

(I first made this when mom came home from the hospital after her back surgery).

Ingredients

  • 2# ground beef
  • 1 C. Chopped onion
  • 2 cloves garlic, minced
  • 1 1/2 tsp salt 1/4 tsp pepper
  • 2-10 oz cans enchilada sauce
  • 1 -15 oz can tomato sauce (2 cups)
  • 1 -Tbsp instant coffee crystals
  • 24 fresh corn tortillas
  • 1 - 8 oz pkg cream cheese, softened
  • 1 cup water
  • Shredded sharp American cheese (12 oz)

Advance Preparation

Cook gr. Beef, onion, garlic, salt, pepper meat is browned, onion tender. Drain. Combine enchilada sauce/tomato sauce. Mix meat mixture and coffee crystals with 2 C of sauce mixture. Set aside. Spread tortillas with cream cheese. 1/4 C meat mixture on tortilla; fold in half.

Place 12 tortillas, open side up, in 2 12x7 baking pans. Combine rest of sauce/water mixture over tortillas. Wrap in foil, label and freeze.

To bake unfrozen dish put 1 cup cheese into tortillas. Bake, covered at 375 for 25 min. Uncover, put 1/2 C. Cheese in. Bake 2-3 minutes until cheese melts. Can top with additional salsa, guacamole or other of your choice


To bake FROZEN: Bake foil-wrapped dish at 375 for 50 minutes. Unwrap, put 1 1/2 cups shredded cheese in tortillas. Bake an additional 2-3 minutes until cheese melts.

Makes 2 casseroles, 6 servings each.
