Ingredients
- 1 recipe Basic Bread Dough
- 12 pint cherry tomatoes, halved
- 1 head roasted garlic, coarsely chopped
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon lemon zest
- 1/2 cup fresh basil leaves, torn
Preparation
Step 1
After the dough has risen once, place it on a floured work surface and stretch it into a large rectangle with a long side toward you.
Preheat the oven to 450 degrees F.
Stir together the tomatoes, garlic, oil, zest, basil, 1/2 teaspoon salt and 1/2 teaspoon pepper in a bowl. Place the tomato mixture in a line along the center of the dough parallel with the long sides. Fold the dough up like a letter, enclosing the tomato mixture.
Cut the dough crosswise in 3-inch intervals, transfer the rolls, cut side up to an oiled baking sheet. Bake the rolls until they are golden and bubbling in the centers, 30 to 40 minutes. Cool to warm and serve.
