Ingredients

  • 3 cups black beans (drained)
  • 1 red bell pepper cut into slices
  • 3 scallons, sliced
  • 2 plum tomatoes, diced
  • 6 tbls extra virgin oil
  • 3 tbls fresh lemon juice
  • 5 tbls frech cilantro, chopped
  • 1 tbls coarsely groun black pepper
  • 1-3 tbls hot pepper sauce
  • 1 tbls apple cider vingar

Step 1

Combine all ingrdients in a bowl and toss. Let the salad rest loosely covered at room tempature for at least 1 hour before serving. Refrigerate any left overs.
