Prime Rib Roast

Ingredients

  • Prime Rib.
  • Season: Roast with salt and pepper.
  • Place: fat side up open roasting pan
  • Insert: Meat thermometer into the thickest part, make sure it does not rest on bone. Do not add water. Do not cover or wrap in foil.
  • Roast: in a slow over (325degrees) to desired doneness. The meat thermometer will register For rare: 140 degrees For medium: 160 degrees For well done: 170 degrees.

Step 1

Roasts are more easily carved if permitted to 'set' in warm place 15 minutes after removal from oven. Roasts continue to cook after removal from oven, so it is best to remove the roast when the thermometer registers about 5 degrees below the temperature of doneness desired.

Timetable for Roasting::
Allow 18-20 minutes per pound for rare
Allow 22-25 minutes per pound for medium
Allow 27-30 minutes per pound for well done

For a small roast, allow the longer period of cooking. For a large roast allow the shorter period of cooking.
