Sharon's Cheesy Double Baked Potatoes

Ingredients

  • 4 Russet Potatoes Baked
  • 2 sticks butter or margarine
  • 1 cup milk
  • 1/4 cup chopped chives
  • 1/4 cup minced onions
  • 2 cups finely shredded cheddar cheese

Preparation

Step 1

Cool baked potatoes. Slice in half. Scoop out insides of potatoes into a large bowel. Add all remaining ingredients except 1/2 stick butter, and beat with a mixer until well blended. Spoon potato mixture back into each potato shell. Take 1/2 stick butter and cut into pieces and place on each potato. Bake in a 350 oven for 30 to 40 minutes.
