Chicken Breasts in Wine Sauce

Ingredients

  • 1 ½ tbs. olive oil
  • 2 boneless skinless chicken breasts
  • 1- 1 ½ cups white wine
  • 2 – 3 whole shallots, sliced into slivers
  • 1 bunch fresh tarragon, coarsely chopped
  • ¼ -1/3 cup heavy cream
  • Salt and pepper

Preparation

Step 1

Heat oil over medium high heat, brown breasts five minutes on each side and then remove from pan. Add ½ cup of the wine and deglaze the pan by letting the wine reduce down until it covers 1/8 inch of the pan. Stir while the wine is reducing.

Add shallots and let cook until translucent, approximately 8 minutes. Add ½ - 1 cup wine and reduce by ½. Return breasts to pan, stir in cream and tarragon until well blended. Cook until the chicken breasts are done. Salt and pepper to taste.
