Ingredients
- 11 C chopped rhubarb
- 3 C mashed black raspberries (could use a little less)
- 1 C water
- 5 C sugar
- 1 lemon, zested and juiced
- 1/3 C minced crystallized ginger
- 1 tsp. ground ginger OR 1 T grated fresh ginger
Preparation
Step 1
Simmer rhubarb, raspberries and water over medium heat for 20 minutes. Add sugar, lemon juice & zest, and gingers. Bring to a boil; reduce heat and simmer 45-55 minutes. Test for gel. Process in hot water bath for 10 minutes.
