Ingredients

  • 2 1/8 cup sugar
  • 3 cups flour
  • 1/4 t salt
  • 6 T buttermilk
  • 1 cup chopped pecans
  • 1 1/2 cups shortening
  • 3/4 t soda
  • 1 cup mashed bananas (about 3 medium bananas)
  • 1 t vanilla
  • 1 t cinnamon
  • 3 eggs

Preparation

Step 1

Cream shortening and sugar.
Sift dry ingredients together, except soda.
Add pecans to dry ingredients.
Add soda to buttermilk and eggs.
Add to cream mixture.
Add dry ingredients, alternately with bananas,
blend well.
Grease and flour loaf pans.
Bake at 325
1 hour 15min

yields 2 or 3 small loaf pans

Invert another pan over the bread pan for the first 20 minutes after removing from oven.

Serve with cream cheese...
