Apple Pie Cheesecake

  • Crust: 2 cups crushed gingersnaps and 6 tablespoons melted butter
  • Filling: 3 packages cream cheese
  • 1 cup sugar
  • 2 eggs
  • 1 egg yolk
  • ½ cup whipping cream
  • 2 tablespoons flour
  • 1 teaspoon vanilla
  • 2 medium firm tart apples(peeled and thinly sliced)
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • Topping: ½ cup flour, ½ cup brown sugar, ¼ cup finely chopped walnuts (optional), ¼ cup melted butter


Cooking time 65mins


Step 1

Heat oven 350 degrees, spray bottom of 10 inch spring form pan with pam. In small bowl mix crust ingredients. Press into bottom and ½ inch up sides of pan, cook 5-7 minutes.
Large bowl mix cream cheese and sugar on medium speed for 2 minutes, Beat in eggs, yolk, cream, 2 tablespoons flour and vanilla – 1 minute
Medium bowl toss apples with 1 tablespoon brown sugar and cinnamon – lightly coated
Pour ½ filling in crust, arrange apples on top, pour remaining filling on top. Bake 40 minutes
Combine topping ingredients. Pour over cake. Cook 20-25 minutes longer til set. Cool. Refrigerate over night.
