Cooking the Turkey

Roast the turkey breast side down, by doing this it will keep all the lovely juices in the breast meat. You will not need to tuck the wings when cooking the bird breast side down.

Ingredients

  • 1 softened (not melted) unsalted butter stick
  • 2 cups orange juice
  • Zest of an orange
  • 1/2 cup fresh thyme
  • 1/2 cup sage
  • 2 cups of chicken stock

Preparation

Step 1

1. Combine ingredients in a bowl and stir with spoon. Rub outside of bird with butter mixture; be sure to apply some mixture under skin for added flavor. Pour remaining juice over turkey.

2. Pour two cups chicken stock into bottom of roasting pan. This will create base for gravy.

3. Preheat oven to 350 degrees

4. Roast turkey in oven for the first hour without opening oven door.

5. After first hour, baste turkey every 30 minutes during cooking process.

6. A roasted turkey should cook for 15 minutes per pound.

Note: If you find that the turkey is browning too quickly during the cooking process, loosely tent the bird with aluminum foil, makeing sure the foil doesn't touch the top of the skin.
