Ingredients
- Crema:
- 1/2 avocado
- 1 Tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp cumin
- 3 Tbsp water
- 1/2 cup greek yogurt
- 2 tsp EVOO
- 1 1/2 tsp paprika
- 4 chicken breasts
- Toppings:
- 1/4 cup diced onion
- 1/4 cup shredded cheddar cheese
Preparation
Step 1
1. Combine crema ingredients in a food processor. Refrigerate.
2. In a small bowl, combine remaining ingredients and brush onto chicken.
3. In a pan over medium heat, cook chicken for 8 to 10 minutes per side. Transfer to a cutting board and shred. Sprinkle with 1 1/2 tsp paprika and toss to coat.
4. Divide chicken, onion, cheese and crema between 2 taco shells.
