Ingredients

  • 1/2 cup finely chopped onion
  • 1 Tbsp.butter
  • 1 6 1/2 oz. can tuna,water packed,drained and flaked
  • 1 cup shredded zucchini
  • 2 eggs,lightly beaten
  • 1/3 cup minced fresh parsley
  • 1 tsp.lemon juice
  • 1/2 tsp.salt
  • 1/8 tsp. pepper
  • 1 cup seasoned bread crumbs,divided
  • 2 Tbsp.canola oil

Preparation

Step 1

In a small saucepan,saute onion in butter until tender.Remove from heat.Add tuna,zucchini,eggs,parsley,lemon juice,seasonings and 1/2 cup bread crumbs.Stir until well combined.Shape into six 1/2-in.- thick patties;coat with remaining bread crumbs.

In a large skillet,heat oil.Cook the patties for 3 minutes on each side or until golden brown.
