Summer's Scratch Strawberry Cake

Ingredients

  • 5 cups cake flour
  • 2 tablespoons+1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoon salt
  • 1 1/3 cup butter
  • 2 2/3 cup sugar
  • 5 eggs
  • 8 oz. sour cream
  • 2 2/3 cup strawberry puree*
  • 1 tablespoon vanilla
  • 10-15 drops red food coloring (**optional)
  • *32 oz. frozen strawberries, defrosted. Strain out juice and puree the strawberries in a food processor until smooth.

Preparation

Step 1

Prepare pans and preheat oven to 350 degrees. Sift flour, baking powder, baking soda and salt together and set aside. Cream butter and sugar together. Beat the eggs together, then beat in slowly, scraping the bowl down halfway through. Combine sour cream, strawberry puree, vanilla, and food coloring in a small bowl. Add flour and strawberry mixture in alternating batches begining and ending with the flour. Pour into cake pans and bake 30 to 40 minutes (depending on size of cake pans).
There will be 3/4-1 cup strawberry puree left over, this can be used to fill the cake.
