Bittersweet Chocolate Mousse

use with cinnamon tortilla crisp or on own

Ingredients

  • 1/2 c. whole milk
  • 2 large egg yolks
  • 4 T. sugar
  • 6 oz. bittersweet or semisweet chocolate
  • 1 t. vanilla
  • 4 large egg whites
  • pinch of salt

Preparation

Step 1

1. whisk milk, egg yolks and 2 T. sugar in a saucepan to blend
2. stir until mixture thickens enough to coat spoon @ 7 minutes (do not boil) remove from heat
3. add chocolate and whisk until smooth - add vanilla - cool @ 10 minutes
4. beat egg whites and salt into soft peaks - add 2 T. sugar until stiff but not dry
5. fold whites into cooled chocolate in 3 additions
6. refrigerate for at least 6 hours.
