Potato Soup

Ingredients

  • Potatoes
  • Onions
  • Milk or 1/2 n 1/2
  • salt/pepper

Preparation

Step 1

For each bowl of soup, pare and dice 1 medium sized potato. Add a slice of onion (or more) and cover with boiling water. Add salt. Cover tightly and cook slowly until the potatoes are very soft (about 15 minutes).

Crush the potatoes with a fork without draining them. Add hot milk (or 1/2 n 1/2) to make the soup as thin or thick as you like it. Season to taste with salt, pepper, celery salt and cayenne. If you like, sprinkle with chopped parsley or chives.
