Ingredients

  • 1 onion, chopped
  • 2 cloved garlic, finely chopped
  • 4 tbs. olive oil
  • 4 chicken quarters, skinned and cut into smaller pieces
  • 3 yellow and red peppers, cut into 1 1/2 inch strips lengthwise
  • Salt and pepper
  • Small bunch of basil

Preparation

Step 1

Fry the onion in the oil until soft; add the garlic and cook until just beginning to color. Add the chicken and turn to bron all over.

Add the pepper and season to taste, coo gently with the lid on, stirring occasionally and adding a little water if it seems too dry. Cook for about 25 minutes ore until the chicken is done and the pepper is soft. Sprinkle basil on top at the end.
