Ingredients
- 2 cups sweet potatoes, cooked and mashed
- 2/3 cup packed brown sugar
- 1/4 cup butter, melted
- 1/2 cup orange juice
- 1 tsp pumpkin pie spice
- 1 tsp grated orange peel
- 1/4 cup chopped pecans (optional)
- 1/2 cup raisins
- 1 20-oz. can sliced pineapple
- 1/2 cup miniature marshmallows
- 1/4 cup grated coconut (optional)

Preparation
Step 1
Combine sweet potatoes, brown sugar, butter, orange juice, pumpkin pie spice, orange peel, pecans, and raisins. Drain pineapple and place in buttered shallow baking dish. Place 1/3 cup of sweet potato mixture on top of each pineapple slice. Bake at 375 degrees for 20 minutes. Top each portion with a few marshmallows, sprinkle with coconut, and bake 5-10 minutes longer.
