Pineapple Refrigerator Cookies

These pineapple refrigerator cookies are an old childhood recipe, and one of my favorites!

Ingredients
- 3/4 cup butter
- 1 cup packed brown sugar
- 2 eggs
- 1/2 cup crushed pineapple, drained
- 1 teaspoon vanilla
- 3 cups flour
- 1 teaspoon soda
- 1/2 teaspoon salt

Preparation
Step 1
Cream butter and sugar.
Add eggs and beat well. Stir in pineapple and vanilla.
Add flour, soda, salt, and baking powder.
Shape into 2 rolls, 2" in diameter. Wrap in floured wax paper and refrigerate for 2 hours or overnight.
Cut in 1/4" slices and bake on greased cookie sheet for 15 minutes at 375° F until slightly brown.
