Lemon Velvet Cream Pie

Ingredients

  • Empty baked pie shell
  • 1 tsp unflavored gelatin
  • 2 tbsp cold water
  • 6 egg yolks
  • 2 cups sweetened condensed milk (1 1/2 cans)
  • 1/4 cup whipping cream
  • 1/4 teas salt
  • 3/4 cup lemon juice
  • whipped cream
  • lemon slivers

Preparation

Step 1

Preheat oven to 375 degrees
bake pie shell

In small bowl soften gelatin in water for 5 minutes. Heat in microwave for 14 seconds and set aside

In large bowl combine egg yolks and sweetened condensed milk. Beat on high speed 2 to 3 minutes until well blended.Beat in gelatin, salt,and whipping cream. Add lemon juice and beat on low for 30 seconds.

Bake 22 to 25 minutes until center looks set when gently shaken

Cool on wire rack for 1 hour

Cover lightly and refrigerate for 2 hours before serving

Top with whip cream and lemon slivers
