Stuffed Cabbage

This is a favorite recipe. It was given to me by Florence McDaniel, a lady I knew at Shadow Rock.

Ingredients

  • Cook following three items together until almost tender:
  • 1/2 lb ground beef fried together with
  • 1/2 lb ground pork
  • 1/2 lb ground veal
  • 1/2 lb bacon cut in small pieces, fried crisp and drained
  • 1 large head cabbage steamed until soft/pliable
  • 1/2 cup regular rice cooked until almost tender
  • 3/4 cup chopped onion
  • 3/4 cup chopped celery
  • 3/4 cup chopped green pepper

Preparation

Step 1

Combine all ingredients except cabbage in large skillet.

Salt and pepper to taste

Add 2 Tbs flour. Now carefully start wrapping meat mixture in cabbage leaves, pin with wooden picks, fry lightly and place in loaf pan. Dilute 2 small c, tomato sauce to cover cabbage. Chop heart of cabbage and sprinkle over rolls and then sprinkle some cheese on top.
