Devils Food Cake

Ingredients

  • 470 grams sugar
  • 160 grams shortening
  • 5 grams salt
  • 320 ml water
  • 5 grams vanilla
  • 320 grams pastry flour, sifted
  • 90 grams cocoa powder
  • 40 grams whole milk powder
  • 10 grams baking powder
  • 5 grams baking soda
  • 250 grams whole eggs

Preparation

Step 1

Cream the sugar, shortening, and the salt and scrape the bowl. Sift the flour, cocoa, milk powder, baking powder, and baking soda. Add to sugar and mix alternately with water. Mix 5 minutes, then scrape the bowl again. Mix the batter and additional minute, scraping the bowl down again. Slowly add the eggs, and mix an additional minute, be careful not to over-mix at this stage. Place dough into 2 9 inch floured baking pans. Bake at 350 degrees for 30 – 40 minutes. Add 2 – 3 drops of red food color for a darker color.
