Appetizer--Meatballs with Feta and Olive

Great and different taste on the typical meatball appetizer.

Ingredients

  • 1 pound ground lamb, beef or turkey
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons finely chopped onion
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped green olives
  • 2 eggs
  • 1 teaspoon Italian seasoning

Step 1

Preheat your oven to 350F

In a large bowl, mix together ground lamb (or other meat) with parsley, onion, feta cheese, green olives, eggs, and Italian seasoning.

Shape into 16 meatballs, and place 2 inches apart on a baking sheet.

Bake until browned on top. Turn over, and broil on the other side.

***These meatballs can be made ahead, slightly undercooked, and frozen on a cookie sheet.

Cook meatballs before freezing. Do Not over cook as they will be heated again in the oven when needed!

Place wax paper on cookie sheet, place meatballs (not touching) on first layer of wax paper.

Add another sheet of wax paper on top of first layer of meatballs, and make another layer of meatballs. (Only make two layers of meatballs on each cookie sheet, so they freeze evenly.)

Freeze meatballs on cookie sheet for 24 hours, then place in freezer bags or bowls for storage

Meatballs can be frozen for 3 months.
