Ingredients
- 2 cups (6 ounces) uncooked pasta (spiral pasta any shape,but not long noodles like spaghetti)
- 2 teaspoons vegetable oil
- 1 1/2 cups onions, finely chopped
- 1 garlic clove, minced
- 1 pound 80/20 lean ground beef (you can your preference of meat combo)
- 1 teaspoon salt
- 2 tablespoons ketchup
- 4-5 large tomatoes, seeded and diced
- 2 tablespoons Dijon mustard
- 2 cups cheddar cheese, shredded
- 1/4 cup pickles, finely chopped (optional)
Preparation
Step 1
Preheat oven to 350 degrees Fahrenheit. Spray 9 x 13-inch baking pan with cooking spray.
Boil the pasta in a large pot according to packaged directions until cooked. Drain and set aside.
Warm the oil in a large skillet. Add the onion and saute until onions are translucent then stir in garlic cook an additional 30 seconds. Add ground beef cook until brown. Drain fat and return to skillet.6
Stir in salt, ketchup and mustard until mixed. Add diced tomatoes. Reduce heat and simmer for approximately 2 minutes or until the mixture is thickened.
Add the noodles to the meat and stir well. Pour into the 9x13 pan and sprinkle the cheese across the top. Bake in the oven until cheese has melted. Remove from the oven and slightly cool before serving. Top with chopped dill pickle) (optional).
