Puerto Rican Sofrito

Ingredients

  • 2 pounds garlic
  • 2 pounds onions, peeled and quartered
  • 1 pound sweet pepper, seeds removed and quartered
  • 3 pounds frying peppers, seeds removed and quartered
  • 1 bunch cilantro
  • 1 bunch cilantrillo
  • 1 tablespoon coarse salt
  • 4 tablespoons olive oil

Preparation

Step 1

Separate garlic cloves from heads. Peel garlic by letting the cloves soak in water.

Add oil to blender or food processor. Add onions and peppers, Blend.

Add cilantro, cilantrillo, garlic and salt. Blend.

Place even amounts of the mixture in about 5 storage jars. Freeze the jars for future use.
