Little Cheesecakes

Ingredients

  • 2 (8 ounce) packages cream cheese
  • 3/4 cup sugar
  • 2 eggs
  • 1 Tablespoon lemon juice
  • 20 vanilla wafers

Preparation

Step 1

Soften cream cheese. Mix with next 3 ingredients. Place vanilla wafers in cupcake papers, one in each, and fill 3/4 full with cream cheese mixture.

Bake 20 minutes at 375 degrees. They will sink slightly when taken from oven. Chill about 1 hour or overnight. Remove cupcake paper and spoon on pie filling.
