Linda's Buffalo Chicken FIngers
- Sauce: 1 cup Frank's Red Hot Sauce
- 1/3 cup butter
- dash of lemon juice
- Chicken Tenders: 1 lb. chicken tenders
- 2 eggs, plus 2 tbls. water
- 2 cups bread crumbs
- vegetable oil for frying
Sauce directions: add Frank's red hot sauce and butter to a small sauce pan. Heat until bubbly. Then add lemon juice.
Chicken Tenders directions: Mix eggs and water together in a wide bowl. Dip chicken tenders in egg wash and then into a dish of bread crumbs. Pat firmly on both sides and shake off excess crumbs. Repeat until all the chicken is coated. Then, heat fry pan and then add oil until the bottom has about 1/3 of an inch. Fry chicken on each side until golden brown. Then dip into buffalo sauce immediately. Serve hot with blue cheese and celery. You can also serve Buffalo sauce for dipping.
