Ingredients

  • 2 cups long-grain white rice
  • 1 tablespoon unsalted butter or vegetable oil
  • 3 cups water
  • 1 teaspoon salt

Preparation

Step 1

First boil plus 18-20 minutes cooking time plus 15-20 minutes standing time.

1. Place the rice in a colander or fine-mesh strainer and rinse under cold running water until the water runs clear. Place the colander over a bowl and set aside.
2. Heat the butter in a large saucepan over medium heat. Add the rice and cook, stirring constantly, until the grains become chalky and opaque, 1 to 3 minutes. Add the water and salt, increase the heat to high and bring to a boil, swirling the pot to blend the ingredients. Reduce the heat to low, cover, and simmer until all the liquid is absorbed, 18 to 20 minutes. Off the heat, remove the lid and place a kitchen towel, folded in half, over the saucepan. Replace the lid and let stand for 10 to 15 minutes. Fluff the rice with a fork and serve.
