Rhubarb Strawberry Crumble

Ingredients

  • 1 pkg. (8.5 oz) sugar cookie mix (like Betty Crocker)
  • 1/2 cup oatmeal
  • 1/4 cup butter, at room temp
  • 2 cups sliced rhubarb (about 8 oz)
  • 2 cups quartered strawberries (about 9 oz)
  • 3 Tbsp. cornstarch
  • 1/2 cup sugar

Preparation

Step 1

Heat oven to 350 degrees. Grease 9" square dish.

In bowl, with fingers, combine cookie mix, oatmeal and butter, until large crumbs form.

In separate bowl, toss rhubarb, berries, cornstarch and sugar; spoon into prepared pan. Sprinkle crumb mixture over fruit.

Bake 40 minutes or until crumbs are golden.
