Chow Mein

This recipe makes use of left over pork or chicken. From Mrs. Howard Penske, Vesta, MN. Taken from the Worthington Handicapped Childrens' Center Cookbook.

Ingredients

  • 1/4 c. butter or margarine
  • 1 c. onion, finely chopped
  • 1/4 t. salt
  • 2 c. celery, chopped
  • Dash of pepper
  • 1 1/2 c. water or chicken broth
  • 1 can bean sprouts or 4 c. cabbage, chopped
  • 2 c. chicken, beef or pork, cut up
  • 2 T. cornstarch
  • 1/4 c. soy sauce
  • 1 bouillon cube, optional
  • 1 t. sugar

Preparation

Step 1

Melt butter in hot skillet.
Add onion and fry 3 minutes.
Add sale, celery, pepper and hot chicken broth.
Cover and cook 5 minutes.
Add veggies and meat.
Mix thoroughly and cook for 5 minutes.
Then combine remaining ingredients and add them.
Stir and cook 1 minute.
Serve hot over rice for chop suey or over chow mein noodles for chow mein.
