Pecan-Crusted Catfish

This was very tasty but the pecans are very rich. Instead of dredging the fish in the pecans as the recipe had instructed, I would just sprinkle on the ground pecans next time.

Also, catfish is a very strong tasting fish to me & I was wanting tartar sauce. Maybe next time, look up a healthy version of tartar sauce to make with this recipe.

UPDATE: mixed the mustard, milk & dill - spread that on top of the fish then sprinkled with some crushed pecans - turned out super good. Found a great paleo tartar sauce recipe also so all good!!

Ingredients

  • 4 tablespoons Dijon mustard
  • 2 tablespoons 2% milk
  • 1/2 teaspoon dill, chopped
  • 1 cup ground pecans
  • 4 catfish fillets (6 oz. each)

Preparation

Step 1

Preheat oven to 425.

In a shallow bowl, combine mustard, milk, and dill. Dip fillets in mustard mixture and sprinkle both sides with ground pecans. Place on baking sheet coated with cooking spray.

Bake in preheated oven for 10 to 12 minutes or until fish flakes easily with a fork.
