Raspberry vinaigrette

Ingredients

  • 1/2 cup fresh raspberries
  • 1/4 cup red wine vinegar
  • 1/4 cup honey
  • 1/2 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Preparation

Step 1

1Purée raspberries with vinegar and honey in a food processor (or in a medium bowl using a hand blender) until smooth. While puréeing, add olive oil in a slow, steady stream. Blend until combined.

2Season with salt and pepper. Store leftover dressing in the refrigerator for up to 2 weeks.
