Mint Cookie Dessert

Ingredients

  • 32 chocolate sandwich cookies (1 16-ounce package contains about 42 cookies)
  • 1 pint heavy cream
  • 2 cups miniature marshmallows
  • 1 cup pastel pillow-shaped after-dinner mints

Preparation

Step 1

In a food processor or blender, finely crush the cookies. Place half the crushed cookies in a 9" x 13" baking pan.

In a medium-sized bowl, whip the heavy cream; fold in the marshmallows and mints. Spread the whipped cream mixture over the crushed cookie layer. Sprinkle the remaining crushed cookies on top. Refrigerate overnight before serving.
