Asparagus and couscous

Ingredients

  • Asparagus and couscous

  • Snap and discard tough ends from 1 lb. asparagus. Place on a baking sheet and lightly drizzle with olive oil. Sprinkle with salt and pepper.
  • Roast in 400F oven, turning occasionally until tender, 7 to 9 min. Slice diagonally into 2-in. pieces.
  • Toss with 2 cups cooked and cooled couscous, chopped fresh mint, crumbled feta cheese and a squeeze of lemon juice
