Ingredients

  • 1 can or 16 oz frozen corn (drained)
  • 4-5 avocados diced
  • 1 red pepper, chopped
  • 1/2 small red onion finely chopped
  • 1/4 cup lemon juice
  • 1/3 cup olive oil
  • 1/2 teaspoon salt and pepper
  • 3 Tablespoons vinegar
  • 1/2 teaspoon oregano

Step 1

Chop avocado, onion and red pepper. Drain corn, and combine all ingredients in a large mixing bowl. Serve immediately with your favorite chips or Mexican dishes.
