Cochinitos de Jengibre

Ingredients

  • 2/3 cup butter, softened
  • 3/4 cup packed brown sugar
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon finely shredded orange peel
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1 egg
  • 1/2 cup molasses
  • 3 cups all purpose flour

Preparation

Step 1

1. In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, ginger, baking soda, cinnamon, orange peel, salt, and ground cloves. Beat until combined, scraping bowl occasionally. Beat in egg and molasses until combined, scraping bowl occasionally. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Divide dough in half. cover and chill for about 3 hours or until dough is easy to handle.

2. Preheat oven to 375. Lightly grease a cookie sheet or line the sheet wtih parchment paper; set aside. On a lightly floured surface, roll half the dough at atime to 1/4 inch thick. Cut out shapes with a lightly floured 4-5 inch pig shape cookie cutter. Place cutouts 2 inches apart on prepared cookie sheet.

3. Bake int he preheated oven for 7-8 minutes or unitl edges are light brown. Cool on cookie sheet for 1 minutes. Transfer to a wire rack; cool completely.
