BAKED SALMON WITH FRESH CITRUS

Ingredients
- One 13 oz salmon fillet
- 1 lime
- 1 lemon
- 1 orange
- 3 T honey
- 1 T minced fresh ginger

Step 1
1. Preheat oven to 425 degrees. Line an 8-inch square pan with wet parchment paper, or spray with canola oil or hemp seed oil or walnut oil.
2. Zest the lime, lemon and orange into one small bowl. Set aside.
3. Juice the mime, lemon and orange. Mix the juices together. Add honey and ginger.
4. Lay the salmon in the pan, Pour the citrus/honey/ginger mixture over top. Sprinkle with the zest. Don't be tempted to throw the zest into the juice; it won't have the same zip.
5. Bake for 15 to 20 minutes, or until just done. Remove salmon from the pan and cover. Pour the sauce into a saucepan. Bring to a boil and reduce by half.
6. Serve with brown rice. Spoon the citrus/honey/ginger mixture over the salmon and the rice.
