Feather White Cake

Ingredients

  • ¾ cup butter, softened
  • ¼ cup shortening
  • 2 cups sugar
  • 2 tsp vanilla
  • ½ tsp. almond extract
  • 4 cups sifted cake flour
  • 5 tsp. baking powder
  • 1 ¼ tsp. salt
  • 1 1/3 cups milk, at room temperature
  • 7 egg whites, at room temperature

Preparation

Step 1

Cream the butter and shortening, slowly add the sugar and beat until light and fluffy. Beat in the extracts. Combine the flour, baking powder, and salt, stir gently to mix. With a mixer at low speed add the butter mix and mix alternately with the milk, mix just long enough to blend. In another bowl beat the egg whites until soft peaks, fold them into the batter. Turn the batter into the pan and bake. Cool 10 minutes and loosed sides and turn out of the pan.
