  • 1 cup Chopped onion
  • 1 tsp Minced garlic
  • 3 cup Chicken broth
  • 1 can Mexican diced tomatoes
  • ½ tsp Chili powder
  • ¼ tsp Cumin
  • 1 ½ lb Chicken breast, cubed
  • 2 tbsn Cornstarch
  • ¼ cup Water
  • ¼ cup Shredded mex cheese
  • 1 tbsn Cilantro
  • Optional Tortilla chips

Preparation

Step 1

Combine first 6 ingredients, bring to a boil, add chicken, reduce heat and simmer until chicken is done, combine cornstarch and water until smooth, stir into soup, bring to a boil and stir until thickened, top with cheese and cilantro, serve with tortillas.
