Ingredients

  • 2 cups graham cracker crumbs
  • 2 1/2 tbsp. sugar
  • 1 tsp. groung cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 cup butter, melted
  • 3 (8 oz.) packages cream cheese, softened
  • 1 cup sugar
  • 2 tbsp. all-purpose flour
  • 1/8 tsp. salt
  • 5 eggs, separated
  • 1 egg
  • 1 1/2 cup commercial sour cream
  • 1/4 cup lemon juice
  • 1/4 cup sugar

Preparation

Step 1

Combine first 5 ingredients; mixing well. Firmly press mixture into a 9-inch springform pan; chill.

Beat cream cheese with electric mixer until light and fluffy; gradually add 1 cup sugar, mixing well. Add flour and salt. Add 5 egg yolks and 1 whole egg, one at a time, beating well after each addition. Stir in the sour cream and lemon juice; mix well.

Beat egg whites (at room temperature) until foamy. Gradually add 1/4 cup supar, 1 tablespoon at a time, beating until stiff peaks form. Fold egg whites into cream cheese mixture; pour into prepared pan.

Bake at 300 degrees for 1 1/2 hours. Turn oven off, and allow cheescake to cool in oven 3 hours. Chill cake several hours.
